Happy Friday to all! Long time no see 🙂 For the sake of a happy Friday, I am sharing with you a super light, easy & nutritious recipe for your lunch! Some colourful tofu & veggie curry!
As you may know, tofu is a nutrient-dense food that is high in protein and contains all the essential amino acids your body needs. Therefore I tend to choose it for cooking protein lunch 🙂
What you need?
– Tofu cubes (firm, not silky)
– Half zucchini sliced
– 1 small brocoli sliced
– 2 garlic cloves
– High quality sesame oil
– Pinch of fennel seeds
– Half tea spoon of each in powder (curcuma, coriander, red paprika, ginger, curry)
– Pinch of salt, black pepper
– Rice flakes
– Juice of half lemon
– 1 large tomato
– Some hot water, coconut cream
Process
– Warm sesame oil and roast your garlic for few minutes
– Add fenel seeds & roast for few more minutes
– Add mix of other spices and warm them in oil for few seconds
– Start adding veggies: first – zucchini, then toamato with a sprinkle of brown sugar, then broccoli, then bit of hot water. Leave it to saute on low fire;
– Add tofu cubes & coconut cream, leave it to cook for 5-10 min longer;
– Season with himalayan salt & black pepper.
– In the end – stir in a palm of rice flakes and let it cook for 5 min more.
– It’s done! Add som lemon juice on top & sprinkle some sesame seed for decoration!
– Ir you fancy more spicy version – you could always add some chili pepper! 🙂
