Healthy warming pasta

Hello Monday! Since Autumn is stepping in more & more it’s about time to shift from refreshing summer dishes to a more warming ones, twisting it with warming spices that is a great way to prepare & protect the body from the cold that is already in the air.

So this time a choose to play with pasta! I love pasta, however I was trying to avoid the classical wheat one due to harder digestion & which is the reason why it stays on the body as an extra kg.

However, since I still love pasta dishes, I am super happy in our days there plenty of healthier and nutritious pasta alternatives. I try to ensure a protein intake during lunch, so this time I chose to cook with fettuccini made of edamame beans, which is a great source of protein. Moreover it contains a great variety of vitamins & minerals, also could reduce cholesterol, contribute to lowering risk of cancer!

So today I went for a fairly simple & comforting fettuccini with coconut, zucchini & baby paprika! It took maximum 40 min to prepare!

What you need

4-5 baby paprika without seeds (cut in small pieces)

Half of medium zucchini (cut in small pieces )

3 slices of garlic, 1 medium onion

1 tbs spoon of ghee butter

2 small tomatoes

Warming spices (kurkuma, coriander, red paprika) – half tbsp of each spice

1/3 can of coconut cream

1 tbsp of dried fenugreek leaves

Some salt

Process

1. Boil edamame beana fettuccini for 8 minutes, rinse & set aside in a warm covered bowl.

2. Cook finely chopped garlic in ghee for few minutes, add finely chopped onion & continue till it softens.

3. Add finely chopped zucchini & paprika, let it cook for few minutes.

4. Add spices & stir, let ir cook for few minutes, than add chopped tomatoes.

5. Add a tsp of non rafinated sugar to “kill” the acid of tomatoes.

6. Cover the pan, lower the fire & cook for about 10 minutes. If it’s too dry you can add a little bit of boiled hot water.

7. Add coconut cream, bring it to boil on low fire.

8. Add salt & fenugreek, let it sit for few minutes.

9. Serve the sauce with the fettuccini!!!

10. EAT SLOW, feel the goodness fuelling your body, put your mobile aside, enjoy!
