Hello, weekend lovers! Weekends are for comfort, and comfort food is somewhat one of best tools to encourage that cozy feeling of well being around the table, usually bringing back childhood memories & that pleasure of slow home cooking.
Comfort food is first about simplicity! So this weekend I am coming back to one of the best childhood dishes – oven-roasted potatoes! Though I added some variation to it to make it more healthy & odorous!
Hereās āthe dealā! You will need:
Potatoes – sliced in elegant pieces
Fresh fenel bulb – sliced in smaller pieces
Zuccini – sliced in round 0,5 cm piecess
Fresh leek āringsā
Small Cauliflower bulbs
Marinate: salt, peper, fresh dill, crushed garlic, few spoons of soya sauce, few spoons of olive oil, dried of fresh oregano & rosemary.
Process: Mix the vegies together with marinate and let it sit for at least 30 minutes. Bake in the oven until nicely roasted!
It can be served as a main dish as well as a side dish, with some natural yogurt & mint on top! It turned out to be super comforting & delicious!
