Freedom, winter carnival & pancakes!

Today is a double festival in Lithuania – 103rd celebration of Restoration of the independent state of Lithuania & a funny one – Užgavenės – a festival that takes place during the 7th week before Easter. The latter corresponds to Roman Catholic holiday traditions in other parts of the world, such as Mardi Gras, Shrove Tuesday, and Carnaval.

I remember Užgavenės from my childhood days as an extremely funny carnival for saying goodbye to winter and calling the spring, a carnival with artistic masks & a lot of dances near big fire on a frozen lake, in which an effigy of winter (so called Morė) is burnt (see picture below) as a symbol of defeat of winter in the Northern Hemisphere.

Another key element of the carnival is PANCAKES, that everyone bake & share that day amongs participants of the carnival!

So to keep this day festive, let the pancackes be!

Fluffy gluten & egg-free poppy seeds pancakes were my choice today.

I blended: 300 g of all purpose gluten free flour, 100 g of blended oats, 100 g psylium husk, bourbon vanilla powder, 2-3 spoons of stevia of other natural sweetener (agave or maple syrup would. work!), pinch of salt, half tsp of baking soda & baking powder, small cup of kefir (fremented milk drink), few tbsp of poppy seeds. Bake it on a coconut or other vegetable oil (sunflower would do too!). Top with whatever toppings you love!
