Lunch in 10!

Hello working people! 🙂 I bet you all have been in a situation of being trapped between virtual calls & meetings recently with not much spare time left for a lunch break!

And I believe we could all agree that skipping lunch – key meal of the day – is not something your body would thank for! So here’s the deal – let’s have an easy, green, nutritious & light lunch, which will take you marely 10 min to prep!

Roast a wholegrain or gluten free tortilla in a non-greasy pan for 1-2 minutes both sides. Then – time for a creative process using whatever healthier goods you have in your fridge!

Today I had the following: pesto sauce, avocado, fresh cucumber, green pea sprouts, chickpea & sesame hummus. So I played well with those!

If you want a heaview version – you could definately add some marinated tofu, tuna or any other protein goodness which is important for a midday meal!
