Friday togetherness

Hello Friday! It’s been a while for Friday in and hosting some friends! And what a great pleasure is that!

Greatest togetherness to me is gathering around a home-made dinner and an open & epic conversations! A

Since eating heavy at night is never a good idea neither for your stomach nor for your night sleep, I usually try to choose a light dinner for myself and even more for my guests 🙂

Nutritious salad is always an option! This time I went for some protein rich ones with chickpeas!

What you need?

– 2 cups of boiled chickpeas

– Thinly grated carrots

– Large cup of marinated artichokes

– Cup of semi-dry tomatoes in it’s oil

– 2 cups of fresh baby tomatoes of various colours

– Cup of Toasted sunflower & sesame seeds

– Cup of soft & mild taste kalamata-like olives

For the sauce

– 2 table spoons of crunchy peanut butter

– 2 table spoons of honey, soya, lemon juice

– 2-3 table spoons of water

– Pinch of good salt & black pepper

Method

Mix all the ingredients together with the sauce, season with extra sesame seeds on top and most importantly – ENJOY 💚
