Light tofu salad

A nutritious, healthy & light lunch is a choice!

And with some spring smell in the air I am bringing more salad on the plate! And I often try to choose more protein for lunch in combination with some juicy leaves & good fat!

Roasted tofu & spinach salad

What you need:

• 120-150 g tofu (sliced in cubes)

• 2-3 tbsp of gram flour & pinch of tumeric (for roasting)

• 1 tbsp of ghuee

• 0,5-1 tsp of brown or caster sugar

• Juice of half lemon

• few handfuls of spinach

• 1 fresh carrot (grated)

• Toasted sesame seeds

• Salt, pepper, olive oil

• Roasted cachews

• Some balsamic cream

Process:

• Prepare green salad first. Mix spinach leaves witu carrot, add pinch of salt, sugar, and lemon and mix (massage) gently with your hand. Let it sit for a while.

• Pour away the excess liquid and add a tbsp of good quality olive oil & sesame seeds. Top-up with cashews.

• Roast the tofu. Slice it and gently roll in gram flour mixed with pinch of tumeric until covered evenly.

• Roast the cubes in ghuee butter in a well heated pan!

• Top-up your salad with the cubes and add some balsamic cream on it!

Chew well, eat slowly & enjoy!
