Mock cheesecake 4free

Hello Friday! With this freezing but sunny weather outside, I secretly keep calling the spring 🙂

A light & bright home-made dessert could definately serve as a celebration of the good things that happened during the week and as a thank-you note for yourself for the things you acomplished in your own agenda!

My sister suggested to call this experiment 4free cake for a reason! Since I am still experimenting a sugar & gluten free eating habits & for many years I can’t drink/eat lots of dairy product due to my digestive issues, I try to find alternatives and there are many!

As this almost non-bake cake is gluten,dairy, sugar & egg free, but is of extremely light & sunny texture, full of protein and healthy fats, energizing & a real unguilty pleasure!

If you fancy to try, heres what you need:

400 g soft tofu cheese

1 can of coconut milk

1 lemon & its fresh juice

Bourbon vanilla powder

3-4 tbs of stevia or other natural sweetener like Agave syrup (here you choose yourself how sweet you want ir to be!)

For the bottom layer:

200-300 g of wholegrain rolled oats

1,5 handful of your favourite nuts (i used pecan)

2 tbs of spiced raw cacao (you can spice it yourself with ginger, cardamom, cinnamon, cayenne pepper or else)

3-4 tbs of coconut or other plant based oil (I used olive this time)

15-20 g of gelatine or certain amount of agar (You should definitively follow the package directions to determine which quantity to use as equivalent)

Process:

First, blend oats & nuts together to crumbs, stir in spiced cacao, and mix everything with oil to make crumbs a bit sticky. Then press the mass hard to a 20 cm round tin and bake for 10 minutes in the oven (200°C). Cool it when out.

Then blend tofu, coconut cream, lemon juice, vanilla into a creamy texture. Later stir in cooled gelatine of agar.

Poor the mass on to the cooled bottom layer, use your imagination to decorate the top (I used pecan nuts & dried caendula blossom) and leave it in the fridge overnight!

Next day, slowly enjoy a piece of light & nutritious dessert with your coffee, tea or cacao!
