Weekend pleasures

Hello dear all! Long time no see 🙂 As Winter starts to kick in and weekends become more & more slow, it’s time for some foodie pleasures & meditation in the kitchen!

And I am sure panckackes will always make your favourite crowd happy & cheerful, but could we opt for a healthier & more nutrition version?

No doubt!

Voilà the recipe of a beautiful crêpe, crispy on the corners and chewy in the middle, that dissapeared from todays breakfast table very fast! 🙂

What you need?

– Flax seed (for smooth digestion, antioxodants, fiber & protein!) – 2 big spoons of grounded flaxeed mixed with 6 spoons of luke-warm water, rested for 5 min;

– 2 small bananas mashed

– 2-3 spoons of greek yogurt mixed with half tea spoon of baking soda

– 2-4 spoons of Sunflower or Sesame (even better) oil

– 3-4 cups of flour (choose whole grain mixed with spelt)

– 1 good spoon of cinnamon

– pinch of salt

– Cup of raw sugar (could be also coconut sugar, agave syryp or any other sweetener you like)

– 2 glasses or water (you can add more depending on the flour, the consitency needs to be smooth and “runny” but not too much!)

– 1 spoon of poppy seeds

Method

1. Mix all the “wet” ingredients together, except water. Take your time, mix ir very well until smooth like silk!

2. Put dry ingredients and stir very well again until perfectly smooth!

3. Bake it in a rather small pan, put a rather thin layer or batter! Do both sides until golden!

4. Eat slow & enjoy!!!!
