Hello Sunday lovers! Even though winter is back again and seems that Spring will still have to wait around the corner, I am in a mood of light and “berry-ish” dessert 🙂

Since I already bringing back natural sugar to my eats bit by bit, I am making a sweeter but still very nutritious and healthy version of a cheesecake! I really love acai berries – a Brazilian “superfruit” from the Amazon and I first tried them in Sicily many years ago. I loved the rich taste and wonderful colour of it!

Only recently I realised that Acai berries are particularly healthy and can add-up to your well being:

Sadly we are far from Amazon but luckily global market hase some some natural acai berry powder to offer! That is what I used for my cheesecake.

Here we go:

Bottom layer: 8-10 fresh dates cut very thin, crushed almonds, 1 cup of rolled oats, good pinch of cinnamon, 1 spoon of raw cacao, 2-3 tbsp of melted coconut butter. All mixed together and pressed heavily in a muffin-tin.

Top layer: 1 box of tofu, 1 can of rich coconut cream, vanilla extract, juice of 1 lemon, 2-3 tbsp of agave syrup, 2-4 tbsp of acai berry powder, 2 tbsp of poppy seeds, 25 g of gelatine melted in hot water and cooled. Blend the ingredients together, in the end stir in the poppy-seeds, check the level of sweetness and adjust according to you! Poor the liquid to the bottom layer, decorate with lyophilised raspberry powder, fresh blueberries & coconut flakes. Freeze over night.
