Merry Christmas or other winter fests to all!
May food that reaches you during this festive period be whole, fulfilling & comforting and shared with pleasure! And even if a little sugar cheat is allowed, I wish that motivation to treat yourself with healthy & nutritious meal during next year remains!
And since I am visiting my homeland Lithuania for this winter, I couldn’t resist an made a Christmas variation of a somewhat traditional so called Lazy cake (no need to bake it!) 🙂 It is super sweet & a real Christmas cheat with a nice cranberry twist!
What you need?
– 3 packs of sugarfree white simple cookies
– 1 box of condensed milk
– 150 g of butter or 100 g of ghuee
– 200 g of good quality white chocholate
– 50 g dark chocholate
– Good pinch of green cardamon & cinnamon
Method
1. Break the cookies in the bowl, add brome. walnuts, spices & cranberries, mix gently.
2. Melt butter on small flame, add condensed milk and stir well, add white chocholate. Still until smooth.
3. Pour the melted mass on the cookies & stir well.
4. Press the mass well in a baking paper layered tin-plate, press very well. Cover and leave in fridge overnight.
5. Take the cake out, melt some dar chocholate & freely decorate the top, add some cranberries on top!
