Guilt-free cake

January 21, 2021

As soon as it comes to dessert, usually a pleasure & joy follow immediately! However after a gorgeous peace lands in a stomach, sometimes it gets stuck there, you may start feeling heavy or even start thinking about extra callories that landed on your cheeks 🙂

Continuing this sugerless eating routine, I thought there must be a healthier version of dessert too!!!

And believe me – there is! And its is so simple to make, and ir looks amazing & can provide you not only with extra joy with your coffee, but also nourish your body all the way! Its sugar and gluten-free, full of protein just in case you care 🙂

Here we go!

1st layer: blend a cup of your favourite nuts, cup of wholegrain oat flakes, cup of almond flower, add 1 tbs of raw cacao and kix everything with 2-3 tbs of melted coconut butter (or other oil if u prefer). Then press the mass into the round tin and bake it in the oven for about 10 minutes at 200 °C. Take out, leave to cool.

2nd layer: Blend around 500-600 g of curd with 2/3 of creamy coconut milk in a blender with 2 tbs of stevia (alternative to sugar) or agave syrup, in the end add prepared gelatine granules or agar. Poor the mass on the first layer, cover and leave it in the fridge overnight.

3rd layer: In the morning, take the beauty out and decorate with pecan nuts. Then melt some ghuee butter, with little bit of coconut cream, cacao and add more stevia/agave syrup if you want and slowly pour it on the cake. Decorate the very top with almond flakes or anything else you love. Leave to cool for 30 minutes.

That’s simply it! Enjot every bite & share the pleasure!

Bon apétit!
