User-friendly avocado cheesecake

Happy slow sunday! It’s crucially important to twist your sunday with a pleasure in order to start your week with good mood and inspiration!

My twist of the day was experimenting with a healthy sugar-free dessert – super creamy & nutritious avocado cheesecake cups!

Fairly simple & fabulous!

Bottom layer: glass of whole oat flakes, 2 palms of hazelnuts, 2 tbs of raw cacao, few picnhes of good cinnamon, 2-3 tbs od melted coconut oil (or other favourite oil).

Process: Blend & mix all dry ingredients, stirr in the melted coconut oil, press into cupcackes tin & bake for 10 min in the oven at 180-200 °C. It would be wise to put a 2 cm wide baking paper string in each cupcake whole and then start to put “crumbs”. It will be easier later to take them out (gently use a knife to help, is it doesn’t come out at once)

Top layer: 3 large avocados, ~200 g cashews soaked for at least few hours in boiling water, around 200 g of thick coconut cream (the one that is separate from the coconut water in the can), 3 tbs or agave syrup, 3-5 tbs of fresh lime juice. Raw cacao chips to decorate (you can improvize here!)

Process: Blend all ingredients! 🙂 And pour the “mass” to the cupcake tin. Decorate with cacao chips and put in your fridge for a night!
