Easy vitamin lunch – nourish yourself!

Good day everyone! In this rainy & grey season not only our mind need nourishment, but body need extra love too!

Lunch is the time when food intakes are digested best in the body due to the midday levels of energy, thats why I usually try to eat the biggest & most nutritious meal during lunch 🙂

Since our body is our only machine, we don’t need to be too smart to get that it will not run long with a low-quality fuel. This is the motivation to choose a healthy & nutritious meal especially for lunch! I usually try to combine protein-full products with some green stuff for lunch.

Today’s variation was Kale & chickpea stew! Super easy, nutritious & delicious! If you fancy to try, go for it!

What you need

Fat: pure ghee butter or groundnut oil

Spices: (pinch of each) cumin, curcuma, red paprika, coriander, salt & black freshly grounded pepper, 1 tsp of brown sugar

Products:

good quality chickpeas (best – soaked overnight & boiled or canned if you a really in a rush)

kale cabbage (3 big branches, leaves taken only, ‘cut’ with hands)

2-3 garlic cloves

3 yellow tomatoes (cut in small pieces)

Few spoons of sesame seeds

Fresh big avocado

Process

1. Cook cumin powder in ghuee butter until it starts to shimmer.

2. Add finely chopped garlic, yet it cook for few minutes.

3. Add finely chopped kale and let it get soft.

4. Add tomatoes, and curcuma, paprika & coriander, let it cook for a while and get seasoned well.

5. Stir in chickpeas, put the lis on & cool for 10-15 min more on low flame.

6. Season with salt & pepper, and add sesame seeds.

Serve with fresh avocado!!
