Bread & butter

Slow homemade breakfast is definately a great way to boost your slow jazzy sunday. And if you decide to nourish yourself with a healthy & nutritious one, it doesn’t have to be boring or tasteless as one might stereotipically think!

I remeber my childhood days, when the best breakfast was a slice of rye bread & warm butter! Oh it brings so much memories and establishes that comfort feeling in my heart straigtaway!

Inspired by this feeling & living a sugarglutenless weekend, I decided to go for some variations in my kitchen.

First, I really love almonds and almond butter. Especially with a fresh apple of soft bread! I often buy it in shops and pay quite some euros for a good one. However, looking for that smooth soft creamy texture I often get dissapointed. So realizing the simplicity of the matter, I decided to make it myself & buy less! And it worked just great!

And you can easily get yours too in half an hour! Just roast good quality almonds in the oven for 10-15 minutes, let it cool a little & then just patiently blend it in your food processor or blender. Some concentration is needed of stopping & stirring, until nut flour starts to get wet and oily. But it is definately worth waiting!

You can season your butter and give it some fusion. This time I added a pinch of himalayan salt, cinnamon & green cardamon. Also added a spoon of sesamee oil! Voilà!

Ofcourse, a nice almond butter needs good company! So another experiment of the weekend was a super easy & healthy bread! No eggs, sugar, oil, yiest or gluten. On the contrary – full of fiber & nuts, a slice that your body would be no doubt happy about!

So all you need is – 1 & 1/2 cups rolled gluten-free oats, 3/4 cup ground flaxeed, 3 tbs psylium husk, around 2 cups various nuts & seeds, good pinch of salt, and around 1/2 l of room temperature water. Mix everything and finish by forming a loaf with your hands, leave to lay for 15 minutes. Then put it in a 200°C oven for 55-60 minutes! And enjoy!

The more I live, the more I start to care about what I actually put in my stomach! This body is our only machine, so to still ride some long & exciting kilometres, properattention & care is needed!
